Tasting note:
This particular single vineyard example, grown on calcium-rich sandy clay soil, pulls you into the glass with aromas of white grapefruit, honeydew melon and asian pear. On the palate the citrus is layered with hints of honey, lentils, smoke and a touch of the spicy white pepper that the grape is famous for. What carries the wine is it's mouthwatering acidity and this sparky, tingling minerality that lasts on the finish. It went wonderfully with the white fish canapé chef Liu and his team created. It accentuated some of the delicate smokiness of the fish with its savoury elements melding with the pickled garnish.
